How can butchers win customers and remain profitable?

The butchery trade has its challenges as our Export Manager, Piet Buis, explains: “Butchers have to be innovative, if they aren’t there is a good chance they will have to close. Times are tough for the butcher who only sells meat."
Butchery influencer Butcher Westy tells what he sees while giving his demos in butchers’ shops: “Butchers shop customers know you sell sausages, mince and bacon, so they don’t have to take up a lot of space in your display. It’s important that you use the space to show how innovative you are so customers say: ‘Wow, that looks good!’ That’s how you inspire them. And sell your innovations and increase your revenue.” Director of the Irish Gastrome Professional Ingredients, Peter Curry, visits a great many butchers. When the butchers position themselves as ‘chefs’ and respond to consumer trends by also focusing on meal components the developments he sees are mainly positive.
